It is a delicate process to make this treasured ceremonial tea. Matcha is made from tea that are grown in shade for their entire life to increase the amount of chlorophyll in the leaves. The leaves are then picked, gently dried and milled ultra-fine on old granite stones. It is the same process that Zen Buddhist monks have used for almost a millennium.
The fine mild flavor accompanies a high content of antioxidants, amino acids and other nutrients, making it one of the world’s most uniquely healthy teas. Ours is organically grown and of very high quality giving it a fine mild flavor and vivid green color. We source it from the Japanese region of Toyota, where it is grown in the mountains 600m above sea level. The high altitude and cool climate makes it ideal for organic cultivation since insects are few and the need to spray pesticides therefor redundant.
