Green Pea Mash with Mint

Ingredients

600 g peeled green peas (frozen will do)
6 tbsp. olive oil
2 dl Nōrr Skyr
1 bundle mint
1 bundle verbena (optional)
100 g salted almonds
Salt & pepper

If the peas are fresh, dip them in boiling water for two seconds. If frozen, defrost and drip dry for water. Now put all ingredients in a food processor, and pulse to a chunky mash. Season with salt & pepper
