Flounder, Celeriac Mayo & Potatoes




600 g potatoes
4 tsp. salt
400 g celeriac
1 tbsp. Dijon mustard
10 tbsp. Nōrr Skyr mayo (http://norrskyr.com/recipe/norr-skyr-mayo/)
Salt & pepper
600 g Flounder (skinned, no bone)

Peel the potatoes, and boil them in a pot of water with salt.

Peel the celeriac, cut it into very thin slices, then cut them in thin strings. Turn mayo with skyr, salt and pepper together.

Put on a pan and let it get nice and warm, add a bit of oil, turn the flounder in flour and put it on the pan. Let it get a nice golden color on both sides.
