Ingredients
1 egg yolk
Salt & pepper
2 tsp. Dijon mustard
2 tsp. apple vinegar
2 dl grape seed oil
1 dl Nōrr Skyr
In a bowl, whisk the yolk, first with salt for a few minutes. Then add mustard and vinegar, keep whisking until fluffy and thick. Now add the oil a drop at a time while whisking, until the mayo is firm. Styr in the Nōrr Skyr with a spoon for a lighter and healthier mayo.
