Smoked Salmon & Beets

Ingredients

400 g small beets
2 dl Nōrr Skyr
2 tbsp. honey
4 tbsp. plume or apple vinegar
Dill
Salt and pepper
200 g smoked salmon

Boil the beets in plenty of salted water, let them simmer for 15 min, leave them in the water another 10 min, pour away the water and cover them in cold water. With your hands, rub the skin off the beets. Cut the beets in half or quarts if they’re too big.

Mix Nōrr Skyr with honey, vinegar, finely chopped dill, salt and pepper. Then mix the beets with dressing, and serve it with the smoked salmon.
